Egg Fried Rice (Indian Style)

This is a very simple recipe and you can make use of left over rice for this recipe and you can make when you need quick fix for lunch boxes.I never tried at home but I tasted this Egg Fried rice when I go for Restaurants and today I had a trial of making over this recipe and went well ;So able to post soon as you might also like it.

Ingredients:
  • Cooked rice-1 1/2 cup (Basmati Rice or Sona masoori of ur Choice)
  • Eggs-2
  • Onion-1no small diced
  • Frozen green peas-1tsp
  • Grated carrot-1tsp
  • Greenonion-1/2 cup diced
  • Greenchillies-2 slit in lengthwise
  • Ginger&Garlic paste-1tsp
  • GaramMasala Powder-1tsp
  • Corianderleaves-few strands
  • Oil-1tbsp
  • Salt to taste
  • Redchillipowder
For Seasoning: (This can be Optional & follow the Method from step 2 by adding Oil in a pan)
  • Urad dal-1tsp
  • Mustardseeds-1tsp
  • Cuminseeds/Jeera-1tsp
  • Curryleaves-few
Method:
  1. Heat oil in a heavy bottomed pan & do the seasoning with Cumin,Mustard,Uraddal & Curryleaves.
  2. Add greenchilies,onion,greenonion and saute till the onion cooked.
  3. Add Ginger Garlic paste,Garam masala,Red chillipowder,gratedcarrot,greenpeas and fry for 2-3 minutes.
  4. Beat the eggs and mix well (like scrambled eggs) and mix well with spatula & form it like Egg Bhurji.
  5. Now add the Cooked rice to this fry and mix well.
  6. Garnish with Coriander leaves & serve hot.
