Potato /Tomato Curry


This variety of item is very simple and easy of cooking to have a good combination with Poori.
So here goes the recipe.

Ingredients:
  • Potato/Aloo-2 boiled
  • Tomato-1 finely chopped
  • Onion-1 finely chopped
  • Melted butter-1tsp
  • Frozen green peas-1tsp
  • Chilly powder-1/2 tsp
  • Turmeric/Haldi-a pinch
  • Salt to taste
  • Cilantro-few handful
  • Garam masala-a pinch
Cooking Process:
  • Heat the cooking  pan and add butter.
  • Add the chopped onions,tomato and saute it .
  • When the onions and tomato becomes tender soft add salt according to the taste and add frozen green peas .
  • Make potatoes to be smashed and add it to the pan and cook it for 2mins.
  • Add water if necessary (we can add boiled water of potato also).
  • Now add garam masala,haldi and mix up with a spatula and let it cook for 3mins.
  • Garnish with Cilantro and ready to serve with poori.

Curd Rice/Daddojanam

The months of December and January(mid dec to mid jan actually) are of utmost importance to people who perform the "Dhanurmasam Vratam".

                                             
                             This is one of the most popular "Naivedyam" offer to the Lord during this month .One of which is made of curd,rice and spices-Daddyojanam/Daddojanam/Curd rice.

          
Ingredients:
  • Home made Yogurt/Curd-2cups
  • Pepper (whole)-1tsp
  • Mustard seeds-1tsp
  • Cooked rice-1cup(NOT BASMATI RICE)(PREFER SONA MASOORI)
  • Dry ginger powdered-1/4 tsp
  • Salt to taste
  •  Oil-1/2 tbsp
  • Curry leaves-6
  • Red chillies-2
  • Asafoetida Powder-a pinch
  • Channa dal/Bengal gram-1/2 tsp (Optional)
  • Split Urad dal/Black gram-1/2 tsp(Optional)
  • Turmeric-a pinch
  • Cilantro leaves-a few handful  to garnish
Preparation:
  • Mix the curd and rice with some salt according to the taste in a big bowl or vessel and keep it aside.
  • Heat oil in a hard bottomed vessel.
  • Add Mustard seeds and pepper.
  • Once the mustard splutter,add the dry ginger powder(sonti),red chillies,urad and chana dal.
  • Then add the curry leaves,asafoetida powder and turmeric.    
  • Mix the above tempering with curd rice that was kept aside .
  • Garnish with Cilantro leaves and serve it.     
Tip:
  • Add grated carrot also for garnish and to taste better.          

Potato Bajji/Aloo Bajji

Ingredients:
  • Potato-2 thinly sliced
  • Atta/Chapati flour/wheat flour-1/2 cup
  • Maida/All purpose flour-1 cup
  • Chili powder-2 teaspoons
  • Salt to taste as required
  • Zeera/Cumin seeds- a pinch
  • Ginger garlic paste-1 teaspoon
  • Bicarbonate of soda-2teaspoons
  • Water-1/2 cup
  • Oil for deep frying
Preparation:
  • Sift Maida flour,Atta flour,chili powder,salt ,Ginger garlic paste in to a bowl.
  • Add water to make a smooth creamy batter ,adding a little more water if necessary .
  • Heat the oil in a deep frying pan and dip the potato  in to the batter,one at a time.
  • When it turns light brown,turn over and fry another side.
  • Serve the potato bajji by taking in to a plate with Tomato ketchup or Tamarind sauce or Onions or any of your favourite dip and enjoy the day.
Tip:
  • You can also substitute sliced onion,brinjal (egg plant),paneer,egg or capsicum(bel lpepper),cauliflower.
  • If you think it is too much work to prepare your own flour,just buy the instant flour mix from any Indian Grocery store.

Ravva Laddu (Sweet Sooji Balls)



This is a very simple and delicious dish to have for any Celebrations or Events.Ravva Laddu is one of the most traditional dish to prepare very simple and quick sweet .Children likes as a snack item.Here goes the Yummy Ravva Laddu description.

Ingredients:
  • Upma ravva/Sooji ravva/ Bombay Ravva-1 cup
  • Sugar -1 cup
  • Ghee/Melted butter-3tbsp
  • Raisins-6
  • Almonds-6
  • Cashews-handful and dry nuts which u like
  • Cardamon -2
  • Grated Coconut-1 cup  (Use fresh one and raw one is preferable)
Preparation:
  • Heat 3tbsp of ghee and roast all the raisins,dry nuts and keep it a side.
  • In the same  pan add coconut and fry it  untill it disappears the raw smell and keep it aside.
  • In same pan add Sooji ravva and fry it untill it lasts raw smell and turns golden color.
  • Put sugar,cardamon powder in rava and fry it for 10 min and add fried coconut and mix up well with a spatula.
  • Fry ravva mix in lowflame ,untill it becomes little thick.
  • Consistency should be thick to form a shape and add fried nuts.
  • Make Lemon balls size by adding a little ghee to each laddu while making it so that the ball holds on tight.
  • Tasty sweet Ravva laddu is ready to serve.

Puffed Rice Masala


Hi friends, This is a very famous snack Item found mostly anywhere in "India"  Comonly known as "Borugula Masala". It's very simple to have and taste.Children like mostly.So here goes the recipe.

Ingredients:
  • Puffed Rice/Maramaralu-2cups
  • Mango slices raw-2 slices(Cut in Lengthwise)(Sour One preferably)
  • Onion-1(finely chopped)
  • Garam Masala-1 pinch
  • Salt to Taste
  • Red chilli powder-1 pinch
  • Ajinomoto-1/2 a pinch
  • Cilantro to garnish
  • Carrot-1 grated
  • Lemon Juice-1 tblsp
Method:
  • Take a bowl and add Puffed rice .
  • Add all the above masala's and onions to the puffed rice and mix it well by hand or spoon.
  • Finally add grated carrot,Cilantro, Mango slices, and salt.
  • Sprinkle the Lemon juice,serve it in to a bowl and enjoy it.
Note:
  • If you have enough time to prepare masala ,you can simply mix the redchillipowder,salt along with ghee and taste it for kids.
  • Choose Spicy garlic powder also to mix.

    Ravva Kesari




    This is a Quick and simple sweet item to have as a snack or during festive days to offer "Naivedyam" to God.
    Here goes the recipe.

    Ingredients:
    • Roasted Sooji/Bombay ravva-1cup (Roast it by adding ghee)
    • Cashews-5
    • Raisins-5
    • Almonds-5
    • Elachi powder-a pinch
    • Rose water/Food color-1 drop-a pinch
    • Ghee-2tblsps
    • Sugar-1cup
    • Boiled water-2cups
    Method:
    • Take a pan and heat it ,Pour ghee in to it and add raisins,cashews,almonds and roast them till it turns golden brown and keep it a side.
    • Now add Sooji/Bombay rava in the same pan and roast it till the sooji changes golden color.
    • Add sugar and mix well with spatula.
    • Now add boiling water in to the pan and stir continuously ,not to form any lumps.
    • Now make gas simmer and bring it in the middle .
    • Add the roasted nuts in to the pan and cook it for 2-3min.
    • Serve it hot in to a bowl.
