Dondakaya Masala

Ingridients :

Dondakaya /Ivygourd /Tindora  -1lb
Onion - 1 finely chopped
Tomato -1chopped
Coriander Seeds - 1/4 cup
Ground nuts - 3tbsp
Cumin seeds-1/2tsp
Red chillies-3
Garlic pods -4
Salt - to taste
Poppy seeds - a pinch
Sesame Seeds-a pinch
Asaefoetida- little
Tamarind juice -1tbsp
Jaggery/Brown Sugar - little
Dry coconut -1tbsp
Oil- to fry
Garam Masala

Preparation:

  • Wash the Tindora & cut into slits +.
  • Hear the oil , fry the ivy gourd & keep it aside .
  • Next add the spices in a pan lightly fry them all without any oil .
  • Cool it down & make a powder.
  • In another pan add little oil ,sauté the onions & tomatoes well .
  • Next add the prepared spicy powder , tamarind juice , jaggery , salt , Garam Masala mix well &cook it till it boils. 
  • Add turmeric , fried Ivy gourds .
  • Mix well & cook for 2minutes .
  • Finally garnish with Cilantro.
  • Goes well with Rice or Rotis.
