Kakarakaya Stuffed Fry ~ Stuffed Bittergourd Fry
This recipe was learned by Mother when she came to U.S for my second delivery time.It was very nice taste .Today I made it for my Lunch Menu.Hope You all may also like this recipe.Soon posting this for you all my dear friends.Here goes the recipe.
Ingridients:
- Bittergourd/Kakarakayalu- 4no
- Onion-1 chopped
- Tomatoes- 1 no chopped
- Turmeric Powder-a pinch
- Salt-1tsp
- Tamarind -1 small lemon size
- Water-2 cups
- Oil- for frying
- Spicy Garlic Powder- for filling
Method:
- Clean the Bittergourd; cut the edges / Tails.Lightly mark with knives but don't insert the knife deeply.
- Take a vessel ,add water,salt,turmeric and tamarind ..
- Add the Bittergourd and let it boil.
- You can pressure cook it for 2whistles.
- Let it coll down and squeeze out the water.
- Heat the pan with 1tbsp of oil.
- Fry the chopped Onions and tomatoes.
- Mix with the Spicy Powder and keep it aside.
- Now heat oil in a frying pan.
- You can remove seeds and fry it.
- Now fry the Bittergourd .
- Remove it from the Oil.
- Now add the removed seeds and fry it .
- Mix the fried seeds in to the cooked Onion& Tomato mix.
- Stuff these in to the Bittergourds.
- Taste this with a Rice with a spoon of Ghee!! Enjoy.......

Stuffed Capsicum Fry/Bunga Mirapakaya Fry
Ingridients:
- Small Size Capsicum /BungaMirapakaya- 6no
- Senaga Pindi/Besan/Gram flour (Or) Pappula Podumu
- Salt- to taste
- Cooking Oil to mix the Powder
Method:
- Clean the Capsicum & dry it by using a cloth.
- Take a bowl add Pappula Podumu or Senaga Pindi / Besan / Gram Flour and salt.
- Mix well and sprinkle little oil and mix it.
- Now take a knife and point to the capsicum to cut vertically ( | ) .Stuff the mixed mixture.
- Heat oil in a pan and fry them well turning on both sides.
- Remove it to a Bowl.
- Serve it with Rice and Enjoy!!
Tip:
- If you feel the Capsicums may turn black while frying to avoid these,first fry those capsicums for a while in the oil.
- Later stuff the mixture and fry it!!

Bendakaya Masala Fry ~ Lady's Finger Masala Fry
I learned this easy and simple recipe four months back from my Sister-in-Law.From that time onwards ,I am thinking to try the recipe.Today I tried this recipe by using the Frozen whole Lady's Fingers with a slight variation.It turned well and tasted good and It completed soon as after preparing it.You can eat along with the Rice or a whole fried one.Hope you may all like this recipe and enjoy it!!
Ingredients:
- Lady's Fingers-10 no
- Besan flour / Gram flour-1/4 cup
- Cumin Powder-1/2tsp
- Coriander Powder-1/2tsp
- Red chillipowder-1tsp
- Salt to taste
- Garam Masala- a pinch
- Oil to fry
- Water-little
Method:
- Wash the Lady's Fingers and let them dry by rubbing it with a neat cloth.
- Cut the edges and top of the Lady's fingers.
- Cut them in Lengthwise and keep it aside.
- Now heat the pan with a oil.
- Meanwhile take a bowl mix the Gram flour,salt,Coriander powder,Cumin & garam masala with the sufficient salt.
- Shift the Lady's Fingers pieces to the bowl.
- Sprinkle with some water inorder to coat the Lady's Fingers.
- Now drop these in to the hot oil.
- Fry them well in a low flame.
- Serve them in to a plate and enjoy with Rice or directly.

Stuffed Bittergourd Fry
Ingredients:
- Bittergourd-3 no large or medium
- Sour Buttermilk-1 cup
- Salt-little
- Tamarind-1/2 "
- Turmeric-pinch
- Oil for frying
Stuffing Powder:
- Whole Dhaniya-1tbsp
- Red chillies or Red ChilliPowder-3no or 1/2 tbsp
- Salt to taste
- Peanuts-1/4 cup
- Garlic Pods-1 or two
Seasoning:(Optional)
- Oil-1tbsp
- Cumin seeds-1/2tsp
- Mustard seeds-1/2tsp
- Chanadal-1/2tsp
- Curry leaves-few
Method:
- Clean the Bittergourds with water.
- Do not peel it and (cut in to two halves is optional) .
- Cook this bittergourds in a vessel pouring the sour buttermilk ,little salt ,turmeric & tamarind.
- Let it cook well and keep it aside.
- Meanwhile heat a pan and dry roast all the above stuffing ingredients avoiding the garlic pods.
- Cool down and make a powder in the mixy jar by adding the garlic pods; and keep it aside.
- Now take the cooked bittergourds and cut a slit in to the belly of the karela.
- Fill the belly of the karela with stuffing and you can tuck the Karela with the thread so that the stuffing does not falls out.
- Heat the pan with oil for the seasoning.
- Add the Mustard seeds,Cumin seeds,chanadal,when they splutters add the curry leaves and turn of the heat.Keep this aside.
- In the same pan ,add oil for frying the stuffed karelas.
- Fry them well untill it changes its color.
- Turn them in the middle of the cook and takecare not to blacken or burn them.
- Remove it and take it on plate remove the thread if tied so and add the seasoning.
- Sprinkle few tablespoons of the reamining stuffing powder and serve it along with rice.
Note:
- Cook the karelas with the sufficient amount of buttermilk or along with the water by adding little salt,turmeric and tamarind.
- Do not over fill the belly of the Karelas with the stuffing powder.

Colocassia Fry ~ Chamadumpa Fry / Arbi Fry
This is an easy and very simple making Fry.Kids may also like this to eat as a whole without rice like potato fry .I am sure that every one can like this fry to prepare for kids .So here goes my recipe.
Ingredients:
- Chamadumpalu/Arbi/Colocassia- 10 no
- Water
- Haldi- a pinch
- Tamaraind-1 "
- Oil for frying
- Vellullipaayakaaram-1/2tbsp or add up to your spice level
Method:
- Wash the Chaamadumpalu with water.
- Peel the skin or you can directly add them to the pressure cooker.
- Pour some water in the pressure cooker and add the salt,turmeric and tamarind.
- Allow to cook for 1 whistle.
- When the pressure comes down ,drain all the water from the Chaamadumpalu and let it cool for sometime.
- Later ,remove the skin if not done.
- Cut in to small cubes or circles.
- Heat oil in a pan,shift all these pieces in to oil and wait for few seconds till all the pieces absorb oil.Don't let them turn,if done they may become smash.
- Fry till they turn golden in color and place them in to a bowl.
- Add the Vellulipaayakaaram or any other spicy chillipowders and mix well.
- Taste with a steamed rice with a spoon of ghee.
Note:
- Before pressure cooking the Vegetable,clean well to remove the dirt.
- You may also mix Kobbari kaaram or Redchillipowder with a salt.

Stuffed Jalapeno Fry
This recipe is very easy to cook if the Jalapenos are ready,and can serve hot & Spicy Jalapenos with the rice.We can also prepare with the normal green chillies too ,if desired Jalapeno's are not available.We can also prepare the same stuffing and cook the procedure with the Simla Mirchi or Capsicum & Bell peppers also.So , here goes the recipe.
Ingredients:
- Jalapeno's - 2 no
- Oil-2tbsp
- Besan flour/Gram flour/Senaga pindi-1tbsp
- Garam Masala-1/2tsp
- Coriander powder-1tsp
- Salt-1/2 tsp
- Fresh Grated coconut or Dry coconut -1tbsp
- Tamarind Juice or Lemon Juice-1tsp
- Grated Carrot-1tbsp
Method:
- Divide the Jalapeno's with a Knife vertically an dkeep it aside.
- Now mix all the above ingredients except the oil.
- Stuff the mixture in to the Jalapeno's.
- Heat oil in a pan,and fry the Peppers ,by turning them in the middle to cook completely and you can cover with a lid .
- Turn off the flame and serve along with the rice with a dollop of Ghee.
Note:
- You can remove the inner seeds of the peppers or Chillies ,if too hot & Do not slit too long as the stuffing may comes out.
- Add little sugar if you need for taste.
- You might also follow the other stuffings for the mirchi here and fry them well.

Palakoora Fry ~ Spinach Fry
This can be made very quickly & easily for our meal time.I prepare this regularly twice in a week with fresh bunch of spinach leaves & few spices available at home; and every Green Leafy Vegetable is good for health ,If we are consuming it in anyform of the food we take.But I never forget about the green leafy vegatables importance published in Telugu & English language on the backside of the school text books in India ,explaining like "Eat Green Leafy vegatables and are good for eyes & health etc".The Fun thing used to read in the Class room was adding "Not" to the sentence and reading it oppositely .Of course,every one have many fun things happened at the time of education.These will be remained as the sweet memories and be reminding when the time arrives to share with someone and today I reminded my fun while preparing and sharing with all of U .Hope ,You all would like this easy Fry.
Ingredients:
- Palakura /spinach- 1 bunch
- Onion 1 chopped
- GreenChillies- 2 to 3 or Red chillipowder -1/2tbsp
- Salt
- Garlic pods- 4 to 5 (chopped or crushed)
- Oil-2tbsp
- Cumin seeds-1/2tsp
Method:
- Separate the leaves from the Spinach bunch,clean it thoroughly with the water and drain all the water.
- Chop them well and keep it a side.
- Take a pan & heat it with the oil,add the cumin seeds,fry it for 1second.
- Add the chopped onions & Green chillies and saute them well.
- Now add the Chopped spinach ,mix well and cook it well for few minutes.You will observe the Spinach comes to very closer.
- Add salt ,garlic pieces or crushed one,into the pan and mix it well.Add the Redchilipowder if using.
- Turn off the flame and serve it with hot Rice.
Variation:
- Add ginger garlic paste and Seasoning with Cumin seeds,Mustard seeds,Redchilies,Curryleaves .

Cauliflower Fry
Ingredients:
- Cauliflower -1 no
- Black pepper powder-1/2tsp
- Salt-1tsp
- Red chilipowder-1tsp
- Kothimeer leaves for garnishing
- Oil-2 tbsp
Method:
- Remove the florets from the Cauliflower and clean it with water& drain all the excess water.
- Heat the pan with oil,add these florets and stir for a while.
- Keep the gas in low flame ,to avoid the pieces not to turn in black.
- Cover with a lid on the top of the pan ,add very little water if necessary & cook it well.
- Now add the Salt,Pepper powder &Chillipowder to the frying florets & mix well.
- Finally garnish with a few leaves of Cilantro .
- Serve it with a Hot rice or Roti.
Variation:
- Add ,ginger garlic paste & garam masala powder for taste.
- You can also boil the florets for 3 minuts in a hot water.

Capsicum Masala Fry
This Capsicum Masala Fry tastes well & Very easy to cook.
Ingredients:
- Capsicums- 2no
- Besan flour/Gram flour/Senagapindi-1/2cup
- Garammasala-1/2tsp
- Dhaniya /Coriander powder-1/2tbsp
- Turmeric/Haldi/Pasupu-a pinch
- Salt to taste
- Redchillipowder-1/2tbsp
- Oil-1tbsp
Preparation:
- Clean the Capsicum with water.
- Cut in to small pieces and heat the oil in a cooking pan.
- Shift the pieces in to the oil and cook pieces till it turns soft.
- Turn with the spatula in the middle .
- Now take a plate or bowl.
- Add all the above powders.
- Mix well all the powders and now add about 1tsp of cooking oil and form a Semi-powder mixture.
- Once you observe the pieces are cooked ,sprinkle the mixed masala powder and fry well till the aroma smells.
- Switch off the flame & Serve it with Rice or Roti.
Tip:
- You can use the same Masala mixture to any Vegetable Fry of your own Choice.

KakaraKaaya Fry ~ Bitter Gourd Fry
The Bitter gourd can be used in preparing many varieties like stuffing masala in it,Curries,Pulusu ,and it can also be used in the Bajji batter also .Today I like to post about preparing Fry with Kakarakaaya.
Ingredients:
- Bittergourds/Kakarakaayalu-3no
- Turmeric-a pinch
- Salt to taste
- Red Chillypowder-2 tbsp
- Cuminseeds-1/2 tsp
- Garlic pods- 4no (layers not removed)
- Oil-2 tbsp
Cooking Process:
- Take Kakarakaayalu/Bittergourds,peel off the outer skin with the help of knife or using a peeler.
- Clean it with water and cut in to small circcles.
- Take a bowl ,add a pinch of salt and turmeric.
- Place the Bittergourd pieces in to the bowl and mix well with hands.
- Keep this aside for atleat 15 minutes/Or Else you can also keep for whole night.By doing this the pieces loss little bitterness.
- Meanwhile,take a blender/Mortar,add salt,redchillypowder,Garlic pods and Cumin seeds to make a fine powder and keep it aside.
- Now squeeze all the water from pieces ,by pressing with hands.
- Heat the cooking pan with oil,and add the pieces and allow to fry till it turns in golden color.
- Remove the pieces in to a bowl and sprinkle the grinded powder ;mix well with a spoon .
- Serve with rice ,along with Muddapappu/Utti pappu/ Plain dal goes well with a spoon of Ghee.

Baby Brinjal Masala Fry ~ Gutti Vankai Masala
The Brinjal, is the popular vegetable of the masses, is native to India which grows almost in every season. In India ,Vankaya is called as "Koorallo Raaju"--King for Vegetables.The most common variety, the glossy purple Brinjal is a familiar component of Indian curries. This in expensive vegetable was known as Malayan purple melon in China. There it was a common food item since 600 BC. May be the shape of first varieties that English speakers came across prompted them to call it as Eggplant. Especially In India,for any occasion the recipe with brinjal is added to the food. I like to eat Brinjal combining with many variations.So, I tried this Baby Egg plant masala fry to my Lunch menu for the day.Here goes the Recipe.
Ingredients:
- Baby Eggplants/Brinjals/Gutti Vankayalu-4 no
- Onion- 1 no chopped
- Tomato- 1 no small chopped
- Lavangam/Clove- 1 no
- Dalchina Chekka/Cinnamon-1no
- Fresh Coconut pieces- 5 no
- Salt to taste
- Coriander powder-1tsp
- Garam Masala- 1/2 tsp
- Elachi - 1 no
- Red chilli powder- 1tsp
- Ginger/Garlic paste- 1tsp
- Jaggery - a pinch
- Turmeric powder- a pinch
- Oil- 2 tbsp
- Water mixed with salt -1 cup
Garnishing:
- Grated carrot
- Kothimeer leaves
- Cashew nuts
Cooking Process:
- First slit the Brinjal in the center and put it in the salt water .
- In a pan add 1tsp oil and heat it,fry the brinjals till it changes its color and keep it aside.
- Now in the same pan ,add 1tsp of oil ,add the onions and cook it till it turns soft and transparent and let it cool.
- Now take a mixy jar,add fried onions,Cinnamon,clove,Ginger/Garlic paste,Salt,Elachi.
- And also add Jaggery,Jeera and make it a fine paste.
- Remove the paste from the jar and add it in to a pan keeping in a low flame turning with a spatula for 2mins and turn off the flame.
- Now stuff these filling in to the fried Brinjals ,which was kept a side.
- Garnish it with Grated Carrot ,Kothimeer leaves and Cashew nut.
- Serve it with Hot Plain rice with a dollop Ghee.

Capsicum Fry
Everytime tasting the fries with Salt and chilipowder is Routine.So for the kids to taste them differ I used "Pappula Podumu'' to this Capsicum fry.It was really Yummy...Yummy to taste.So here goes my Recipe.
Ingredients:

- Capsicum -2
- Onion-1 chopped
- Salt to taste
- Putnala pappu/Senaga pappu/Bengal gram-1/2cup
- Garlic pods-3 (Don't remove the layers)
- Red chillies-3
- Curry leaves -3
- Cumin seeds-1/2 tsp
- Mustard seeds-1/2 tsp
- Oil-1tbsp
- Clean the Capsicum and cut it into small cubes.
- Heat the Oil in acooking pan and add Mustard and Cumin seeds ,when they starts popping add Curryleaves .
- Now add the Chopped Onions and Capsicum pieces and Let them saute it.Turn the Pieces in the middle of the cook with a spatula.
- Add little salt to the pieces and cover with a lid,keeping the gas in Lowfalme.
- Meanwhile Take a mixyjar ,add Bengalgram,salt ,Red chilies,Garlic pods and turn it to form a fine powder and keep it a side.(This is a "Pappula Podumu")
- Observe the Capsicum pieces are cooked and Once it done .
- Add the Bengal gram powder to the above pieces and mix it well.
- Turn off the flame .
- Serve it with Hot Rice having with a little Ghee.

Potato Fry
Ingredients:
- Potato-2 boiled and cut in to small pieces
- Onion-1 finely chopped
- Tomato-1 chopped
- RedChillipowder-1/2tbsp
- Salt to taste
- Cilantro for garnishing
- Oil-1tbsp
- Cumin and Mustard seeds-1/2tsp
- Turmeric-a pinch
- Heat a cooking pan and pour oil in it and add cumin and mustard seeds .
- Let them crackle and add turmeric,curryleaves and allow it to fry.
- Now add onions and saute it for 3mins.
- Add tomatoes to the onions and mix well with the spatula and cook well.
- Once all done cooked ,add the boiled potato pieces and add redchilipowder and salt.
- Cook it for 5mins continuously stirring with a spatula untill potato pieces turns in to golden color.
- Serve it in a bowl and garnish with Kothimeer.
- Combine it with hot plain rice or roti.
