Bread Chat
Today is the Children's Day in India(i.e; November 14)&I wish You all the Children with a very Happy Children's Day .
So ,I am posting this simple Bread Chat item as a Children's Day Special.So parents enjoy this with your Lovely Children!!
Ingredients:
- Bread Slices-5
- Onion-1small chopped
- Tomato-1 small chopped
- Green chillies-1 no (optionla)
- Red chilly powder-1/4tsp
- Salt-to taste
- Coriander powder-1/2tsp
- Jeera Powder-1/2tsp
- Chat Masala Powder-1/2tsp
- Tomato Ketchup-1tbsp
- Lemon Juice-1tbsp
- Grated carrot-2tbsp
- Coriander leaves-few
- Oil-sufficient for frying
Method:
- Take the Bread slices ;remove its edges i.e; brown part.
- Now cut the bread slices in to small cubes.
- Now heat a kadai with the sufficient oil and fry the bread cubes.
- Bread cubes fry very soon so put the flame in medium.
- Take them in to a bowl and they will be crunchy.
- Take a bowl,add the chopped onions,tomatoes ,coriander powder,Jeera powder,Salt.
- Add Red chilli powder,Chat Masala powder Tomato ketchup,corainder leaves,Grated carrot and the Lemon Juice.
- Mix them well nicely and keep it.
- Now take the fried crumbs and mix it nicely with the above dressing.
- Serve it to a bowl and enjoy!!

Carrot-65
Ingredients:
- Carrots-3 no
- Salt-sufficient to taste
- Soya sauce-1/2 tspn
- Chilli powder-1/4tspn
- Coriander powder-1/4tspn
- Azinomoto-1/4tspn
- Ground pepper powder-1/4tspn
- Green chilly and garlic paste-2tspn
- Ginger garlic paste-1/4tspn
- Curd-2tbsp
- Red food color- a pinch
- Corn flour and Besan flour (1:1 ratio)
- Oil- for deep fry
Sauting:
- Oil-tbspn
- Garlic pods-3 no chopped
- Green chillies- 3no vertically slitted
- Curry leaves-few
- Kothimeer
- Take carrots,wash them and peel out the skin.
- Cut them in to long pieces.
- Take a large bowl and shift this chopped carrots and add sufficient salt.
- To this add the above ingredients except oil and the flours.
- Next add curd .Mix all nicely and marinate for 1hr.
- After the completion of 1hr add pinch of red food color to this marinate.
- Mix nicely and add enough corn flour and besan flour (1:1 ratio).Do not add water at all.
- Only add the sufficient flours to the marinade.
- Heat oil in a pan.
- Deep fry carrot pieces as pakodis in medium hot oil.
- Take them in to a paper towel.
- Now heat a pan,add oil then add finely chopped garlic pods,green chillies,curry leaves and then add fried carrots.
- Garnish with kothimeer
- Saute it nicely and Serve hot.

Yellow Peas Mixture
This is a very easy and tasty evening snack item and these are a very good source of Cholesterol-Lowering fiber and also of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal.So here goes the recipe.
Ingredients:
- Yellow Peas/Pasupbatthani-1 cup
- Onion-1 no small
- Tomato-1 no small chopped
- Salt-to taste
- Red chillipowder-1tsp
- Garam Masala-1/2tsp
- Dhaniya Powder-1/2tsp
- Raw Mango pieces-2tbsp
- Lemon Juice-1tbsp
- Grated Carrot-1tbsp
- Kothimeer leaves-few chopped
Method:
- Soak the Yellow peas in the water for the Whole night .
- Pressure cook the peas by adding the sufficient water and little salt for 3 whistles and keep it aside.
- Take a bowl add the chopped onion,tomato pieces,garam masala,red chillipowder,Dhaniya powder.
- Add the raw mango pieces .
- Add the cooked Yellow peas to the bowl and mix well by adding sufficient salt .
- Finally garnish with grated carrot and the kothimeer.
- Tasty yellow Peas Mixture is ready to Serve!!
Note:
- You can also add the Mango Ginger (Maamidi Allam) pieces few to this mixture for taste.

Pav Bhaji
This is a fast food dish native to Maharashtrians and is popular in most Metropolitan areas in India.Pav in Marathi means Bread and the Bhaji is a term for a curry and a vegetable dish.Pav Bhaji consists of the bhaji (a potato based curry) with mixed vegetables and the Pav garnished with Coriander and Onions.It is consumed as a snack between lunch and dinner.
I started to eat and like it with my friends from my school days .My school education is at "Rajasthani English Medium School" in Vijayawada ,most of the friends are from the North apart from India and from them I came to know some Chaat recipe names & eat.For the School Farewell Party Function ,this Pav bhaji was one of the party Favourite item for Me and other South Indian Friends.My Mother never made for me , and I used to eat available on hand carts.My father used to get it for me in India almost when the Weekend comes ,after my marriage ,My husband started me to taste by taking to the street stalls at Hyderabad.I never forget these days when I eat Pav Bhaji .Everytime being tasted from the Vendors,so this time I tried it for the first time in the U.S by seeing various Internet resources .Among them I liked to prepare this with slight variation from the http://www.gruhinii.com/ edited by Uma Ramana Garu.My kid & hubby liked it well.So,friends here goes my recipe.
Ingredients:
- Carrot-1 large cubed
- Poatatoes-2 cubed
- Cabbage-1 cup
- Capsicum-1 cup chopped
- Tomatoes-2 chopped
- Cauliflower florets-1 cup
- Onions-2 (1 onion is finely grounded in to paste)
- French beans- 8 to 10 string and chop
- Green peas - 1/4 cup (frozen or dry peas soaked in water )
- Green chillies- 2 no slit in lengthwise
- Turmeric powder-1/4 tsp
- Salt-2 tsp or adjust to taste
- Red chillipowder-1/2 tsp
- Sugar-1/2 tsp (optional)
- Cashew paste -2tbsp
- Oil-1 1/2 tbsp
- Pav bhaji Masala-1 1/2 tbsps
- Lemon Juice-1tbsp
For the Pav:
- Pav / Pav breads- 6 or more of your choice
- Butter-1 tbsp(low fat butter)
- Salt & Red chillipowder - a pinch (optional)
Coriander leaves for Garnishing
Preparation:
- Pressure cook cabbage, carrot,potatoes,cauliflower,beans,peas and carrot along with 1 cup of water for 2 or 3 whistles ,till soft.Drain any left over water from the cooked vegetables and keep it aside.
- Mash all the cooked vegetables using a masher.
- Heat oil in a Vessel,add the green chillies and onions and saute for 4 minutes ,add the ginger garlic paste and saute it for another 3 minutes .Now add the capsicum and saute for 2minutes.
- Add the chillipowder,turmeric powder,Pav bhaji masala,sugar,Kaju/Cashew paste & salt .Combine well and add the tomatoes & cook untill soft & leave the oil.
- Add the mashed vegetables along with a cup of drained stock and cook on high for a minute.
- Reduce flame and simmer for 10-15 minutes.
- The gravy will begin to thicken .Adjust the salt if required ,add little butter & garnish with coriander leaves and the Bhaji is ready to serve .
- Now slice the Pav into two horizontal pieces and aply butter on it.Heat a tava and cook the Pav on both sides untill golden color &rub or sprinkle with redchilipowder & salt (optional).
- Serve Pav with hot Bhaji & the Yummy Pav bhaji is ready to enjoy!!
Note:
- You can choose 2to 3 variety of vegetables for preparing the Bhaji and If the Beet root is used the curry gets the deep reddish purple color.

Chivda / Puffed Rice Masala
It is very simple and easy to prepare & goes well if any unexpected guests arriv eour home.It can be prepared and stored for a long time ,kids can also like it well.This Chat item was came to know for me from one of my North Indian School (Rajasthani English Medium School,Vijayawada) friend "Pinkey .J.Jain".She regularly used to bring this Chat item in her tiffin box and used to share to all friends in the Class.Her Mom prepares excellently.Days ,I studied in the school with her had this chat item and when we completed our school education &; was entering to the College ,both being Joined in different colleges ,I missed this recipe.But I got the procedure of preparing this item from her Mom,anytime I can taste it from My Mother.Never tried this before in India,simply tasting this item from my Mom.After coming to the U.S,I have been eating when I goes to some of my North Indian Friends home.Again ,I reminded the taste & procedure of my School friend's ; today started doing with little variation.So,friends,here goes the recipe item .
Ingredients:
- Puffed rice/Maramaralu/Murmure- 5-6 cups
- Patla Poha/Atukulu-1/4 cup
- Salt as per taste
- Sugar as per taste (powdered sugar)
- Curryleaves-few
- Hing-1/2 tsp
- Garlic pieces- 1tsp or Garlic paste -1-2 tsp
- Peanuts (roasted)-1/4 cup
- Turmeric-1/2tsp
- Cumin seeds-1tsp
- Mustard seeds-1tsp
- Oil-1/2tbsp for seasoning & for roasting dals,nuts use as needed
- Bengal gram /Senagapappu-2tbsp
- Greenchillies-3 no chopped or Red chillipowder-1tsp
Method:
- Place the Poha in a shallow Microwave safe dish and microwave on HIGH for 2mins & keep it aside or You can also roast for sometime in a pan heating with oil.
- Heat the Sauce pan with oil,add Mustard ,Cumin,Curry leaves .
- When they starts splutter ,add Ginger pieces or paste,Green chillies,peanuts ,bengalgram and fry for few minutes.
- Add red chillipowder (if greenchillies not using) ,Hing,Turmeric ,salt & turn off the heat.
- Mix Poha & Puffed rice to the Tadka /seasoning .Mix well ,and it takes time to coat the oil all over the Puffed rice.Gently mix it.
- Finally sprinkle powdered sugar & mix it.
- Let it cool completely.Serve on a plate .
Serving Ideas:
- Serve with Bhaji /Pakora or just with mixed sev.
- Try with chopped Onion,Tomatoes, Coriander leaves & Lime Juice.
Note:
- If Puffed rice are soft,then dry roast them on low flame .This will help them to keep crunchy.
- While tempering,keep very flame ,otherwise the masala willburn fast.
- Let it Completely cool and store in an Air-Tight Container.

Paapadi
These are small Crispy flat Puris.Usually combined in almost all Chaat recipe to make Crunch.I used to like to eat it in Plain or with spiced up.So ,they can be Plain or Spiced up.The prepartaion time will be take only 10 minutes.You can make this recipe in large quantity & store it in an Air-Tight Container;so that you can rustle up a recipe when unexpected guests arrive..Even Kids can like to eat as a evening snack item, once they are back from their School.
Ingredients:
- Maida / Plain flour-2cups
- Carom seeds /Ajwaiin-2tsp
- Oil-1tbsp
- Salt to taste
- Oil for deep frying
Method:
- Mix the flour,salt,oil &ajwaiin in abowl,add enough water to make a firm dough.
- Remember to make the Papadi dough stiff and roll it out as thinly as possible.
- Knead well and roll out in to small thin rounds of about 1 1/2 "diameter without using flour if possible.Prick with a fork.You can choose to roll out small puris or a large dough circle and cut out small rounds using a cookie cutter.
- Heat oil in a pan & deep fry the pooris in the hot oil until golden brown in color and crisp,keeping the gas in a lowflame.Prick each papadi well before frying to ensure that it does not puff up.
- Cool and store it in an Air-tight Container.
- Serve it or use it as required.
Note:
- You can also choose making the dough by using either the plain flour or wheat flour or combining the two flours.

Peas Masala/Mixture
This is commonly Known as "Batani Mixture" in India and can find anywhere in the streets selling in a small Cart and near Chaat Bandhaars too.It goes good taste to eat in a Cool Weather.Here goes the recipe.
Ingredients;
- Dry peas/Green peas-1 cup(soaked in water whole night)
- Tomato-1 finely chopped
- Potato -1 medium size boiled
- Garam Masala-1/2tsp
- Jeera powder-1/2 tsp
- Green chilly-1 large chopped
- Chillipowder-a pinch
- Onion-1 chopped
- Salt to taste
- Cilantro leaves to garnish
- Turmeric-a pinch
- Ghee/Butter-1 tsp
- Carrot-1 grated
- Lemon juice-1 tsp
- Water -1 cup
Preparation:
- Take a vessel/pressure cooker (for 3 whistles) add soaked peas ,potato and cook it by adding little salt .
- Drain the peas from the water and keep it aside.(Don't pour the water)
- Now take a pan and heat it ,add the butter/ghee .
- Add the chopped onions and saute it by adding little salt .
- When the onions becomes tender soft add the tomato pieces,green chilies to the pan and cook it for 2mins.
- Add garam masala,turmeric,chilli powder and mix up well with a spatula by adding the boiled peas water.
- Cook it for 2mins when it bubbles out ,turn off the flame and sprinkle lemon juice.
- Serve it in to abowl and garnish with kothimeer and grated carrot.
