Lemon & Ginger Rasam

Ingredients:


  • Cooked Dal -1/3 cup
  • Fresh Grated Ginger-1 tsp
  • Lemon  Juice-1tbsp
  • Oil- 1tbsp
  • Turmeric - a pinch
  • Green Chillies- 2no
  • Cumin seeds-1/2 tsp
  • Mustard Seeds-1/2tsp
  • Asafoetida- a pinch
  • Red Chilli Powder - 1no
  • Curry leaves- few
  • Water- 2 cups

Method:
  • Take a Vessel ,heat with oil.
  • Add the Mustard seeds,Cumin seeds,Asafoetida,Red chillies,Green Chillies,Curry leaves,add  the grated ginger.
  • Fry them all well.
  • Now Mash the cooked dal and add to the seasoning.
  • Mix it well,add the water,adjust with salt and allow to boil it.
  • Nice aroma starts and this stage turn off the flame and add the Lemon juice.
  • Mix well and serve with the Rice.

Ghee & Dal Rasam



This is a very simple and easy Rasam for children.Try this  and no need of adding tomatoes or any  instant or homemade rasam powder also.Adding of Ghee to the seasoning tastes good; Hope Friends you all may like it.

Ingredients:

  • Kandipappu/Toor dal-1/4 cup boiled
  • salt to taste
  • Turmeric powder- a pinch
  • Red chilly- 1 no
  • Mustard & Cumin seeds- 1/2tsp
  • Curryleaves- few
  • Ghee-1/2tbsp
  • Hing/Asafoetida-a pinch
Cooking Method:
  • Clean the Toor dal /Kandiappu and let it cook with water in  a pressure cooker for 4 whistles.
  • Mash the Dal with the spoon.
  • Heat a vessel with Ghee and add the seasoning.
  • Add the Mashed dal along with water.
  • Add salt and turmeric powder.
  • Mix well and let it boil for few minutes.
  • When the Dal rasam starts rises switch off the flame.
  • Serve it with rice!! Enjoy the taste!!

Cabbage Rasam


This is also one type of Rasam which tastes like "Nimmakaya/Lemon Charu".Almost the procedure is same ,only we add the boiled water of Cabbage Vegetable.I usually prepare when I cook any variety with the Cabbage like Curry,Dal.
Here goes the Procedure.

Ingredients:
  • Boiled water of Cabbage-1 or 2cups
  • Toor dal or Yellow Moong dal-1 cup
  • Green chillies-2 no slits
  • Ginger Pieces-1/2tsp
  • Onion-1/4 cup chopped
  • Turmeric- little
  • Salt to taste
  • Lemon Juice-2tbsp or add more for sourness
Seasoning:
  • Oil/Ghee-1/2 tbsp
  • Mustard seeds-1/2tsp
  • Cumin seeds-1/2tsp
  • Curry leaves-few
  • Red chillies - 2 splits
  • Asafoetida- pinch
  • Kothimeer- to garnish
Method:
  • Take a pressure cooker,wash the dal twice and add 2 or 3 cups of water.
  • Add a pinch of turmeric ,allow to cook for 4 whistles.
  • Once the dal is cooked mash it and keep it a side.
  • Take a hard bottomed vessel ,add ghee/Oil for the seasoning.
  • Add the Mustard seeds,Cumin seeds ,when they starts spluttering add the red chillies,curry leaves and Hing.
  • Now add the Chopped onion,Green chilies and the ginger pieces.
  • Let them all saute well.
  • Now add the boiled Cabbage water and the cooked dal.
  • Stir them well.
  • Add salt and let it boil for 5minutes ,in a simmer.
  • Turn off the gas and add the lemon juice for sourness.
  • Garnish with Kothimeer leaves and serve it along with Rice.

Pappu Charu ~ Toor dal Rasam ~ Pappu Pulusu

This is a Lentil soup prepared with variety of vegetables with Mashed Toor dal & Tamarind Extract & it is a Mild Sambar with out Sambar powder.It is very tasty & makes everyone mouth watering.I like this very much prepared from one of my aunty "Mani" at Vijayawada.I came to know this item when I am studying Third standard ,even  I didn't like to eat when I mom Prepared for me,I used to like always my Mani Aunty pappu charu.I love her Pappu Charu forever.Today ,I tried for my boy & hubby.They liked it very much and posting it for all of you.

Ingredients:
  • Kandipappu/Toor dal-1 cup
  • Tamarind- 1 big lemon size (Soak in 2 cups of water & extract the pulp)
  • Turmeric powder- a pinch
  • Sugar-1tbsp (optional)
  • Salt to taste
  • Any variety of Vegatables of your choice can be taken and cut in to pieces.(Like Brinjal,Drumstick,potato,Sweet potato,Okra/Ladies fingers,Egg plant,Tomato etc)
  • Onions-2 (Cut lengthwise)
  • Greenchillies-4no (slit lengthwise)
  • Tomato-1 no
  • Oil-1tbsp ( this is optional ,Used to saute the veggies in a sauce pan)
For Seasoning:
  • Oil-2tbsp
  • Mustard seeds-1tsp
  • Cumin seeds-tsp
  • Curryleaves-2 sprigs
  • Garlic -3 cloves (Cut in to small pieces or crush them)
  • Red chillies-4no
  • Chopped coriander leaves for garnishing
Method:
  • Clean the dal and pressure cook with 2 cups of water for 3-4 whistles and mash it smooth with the back of the laddle or use a blender / Mixy jar.Set this aside.
  • In a separate sauce pan ,add 1 cup of water and cook all the chopped vegetables,Curryleaves  and cook  them on medium heat till they turn soft.Or you can saute them well using 1 tbsp of oil;later add  1 cup of water.
  • Now add the mashed dal,Tamarind juice ,Salt,Sugar ,turmeric powder and allow to boil in low flame for 15 minutes.Check the taste & adjust tamarind juice ,salt according to taste while cooking.
  • Now take a hard bottomed pan for the seasoning,add oil & heat it.Add crushed garlic,mustard seeds,cumin seeds,red chilies,curry leaves and Hing,allow to splutter.Add this seasoning to Pappu charu.
  • Allow to cook for 3 minutes & garnish with the Coriander leaves.
  • Tasty ...Tasty Pappu Charu is ready to eat & enjoy  with hot rice with any fry or Chutney as a side dish.


Variation:
  • You can cook or make the seasoning with Ghee for kids.
  • Try the taste Sprinkling  the Lemon Juice while serving

Egg Pulusu / Kodiguddu Pulusu



This dish is very simple and tasty .It  goes good along with Plain rice,Pulav and Biryani.Kids like its taste more eating the Egg with Pulusu.So here goes the recipe.

Ingredients:
  • Eggs-5
  • Tamarind- 1 big lemon ball size
  • 3 cups of water
  • Onions-1 no chopped in lengthwise
  • Green chillies-1 no choped in lengthwise
  • Tomato-1 no chopped
  • Garam Masala-1/2tbsp
  • Coriander powder-1/2tbsp
  • Sugar-1/2tsp
  • Salt to taste
  • Kothimeer/Cilantro/Coriander Leaves- few handful
  • Peanut powder/Fresh Grated Coconut-
  • Red Chillipowder-1/2tbsp
  • Ginger/Garlic paste-1tsp

Tadka/Seasoning:
  • Oil-2 tbsp
  • Cumin seeds-1/2 tsp
  • Mustard seeds-1/2 tsp
  • Red chilly-1 slit
  • Curryleaves-few
  • Turmeric powder-a pinch
Cooking process:
  • Take a large vessel and pour water ,add eggs to it and boil it.Or Allow it to cook for 3whistles in a Pressure Cooker.
  • Meanwhile soak the tamarind in a warm water and extract the pulp and keep it a side or you can also soak the tamarind in the water wholenight and use its pulp for the day.
  • When the Eggs are boiled,remove the shell and pierce the eggs with the knife and keep it aside.
  • Piercing of eggs makes to absorb the Pulusu and tastes good.
  • Take a wide vessel or cooking pan,add oil and heat it.
  • Add Cumin seeds,Mustard seeds,Red Chilly ,Turmeric and Curryleaves.
  • When they starts popping add the Garlic/Ginger paste and roast it for 2minutes.
  • After that add the Chopped onions,Tomatoes and Green Chillies in to it and saute it for 5minutes covering it with a lid ,keeping the Gas in a Lowflame.
  • When all these gets transparent and soft,add Tamaring pulp or Pulusu to the cooking pan.
  • Adjust with salt and chillipowder and cook it for 10 minutes.
  • When it starts boiling,add Eggs and little sugar,Coconut/Peanut powder and cook this for 10 minutes.
  • Garnish it with a Kothimeer .
  • Yummy....Yummy.........Egg Pulusu is ready to taste!!

Nimmakaya (Lemon) Charu


Ingredients:
  • Kandipappu/Tuvaram dal/Toor dal- 1 cup
  • Haldi/Turmeric- a pinch
  • Salt to taste
  • Green chillies-2
  • Tomato-1 no
  • Onion-1 chopped
  • Ginger- 1/2 inch chopped
  • Lemon Juice- 2 tbsp or added more for sourness
Seasoning:

  • Oil/Ghee-2tsp
  • Cumin seeds-1/2 tsp
  • Mustard seeds-1/2tsp
  • Curryleaves-few
  • Red chillies-2 split
  • Hing/Asafoetida- a pinch
Method:
  • Soak Dal in a pressure cooker with 2cups of water and a pinch of turmeric for 5minutes .
  • Cook up for 3 whistles ,and when the pressure comes down Remove the Lid and mash the dal with salt and keep it aside.
  • Now take a large vessel for seasoning.
  • Heat Oil/Ghee and add Cuminseeds,Mustard seeds,red chilies,Curryleaves and hing.
  • Stir this till the Popu/seasoning comes to light brownish.
  • Now add the chopped onions,Tomatoes,greenchillies,Ginger pieces to the seasoning and cook it till it becomes soft.
  • Now add one cup of water to the Vessel and let it boil till it bubbles.
  • Add the mashed dal to the boiling water and stir it.
  • Once it bubbles out and done ,turn off the flame.
  • Add lemonjuice to the Dal and mix well.
  • Garnish with Coriander leaves.
  • Serve along with Hot rice.
